Raw Cacao Truffles


Who doesn’t love a little dark chocolate indulgence??? A group of coworkers and I were getting together after the completion of the Conscious Cleanse (thanks CC for the recipe!), so I brought these as a celebratory treat. The recipe makes quite a few truffles so I ended up freezing the leftovers and I pull one out when I want a little chocolate fix. They are oh-so decadent and delicious!

Serves: 30 truffles
  • ½ cup coconut oil, warmed to soften
  • ¼ tsp Himalayan crystal salt plus a pinch for garnish
  • 2 tsp. vanilla extract
  • ¾ cup good quality pure maple syrup
  • 1 cup dried shredded coconut
  • 2 cups raw cacao powder – gauge the texture of your mixture and add more as needed.
  1. In a high-speed blender, blend the warmed coconut oil, salt, vanilla extract and maple syrup. Add the shredded coconut slowly and blend until smooth.
  2. Pour the mixture to a large mixing bowl. Slowly stir in cacao powder and mix by hand until thoroughly combined. Place the bowl in the refrigerator for about 15 to 20 minutes to harden the mixture slightly.
  3. Spoon tablespoons of the mixture and roll into small balls. Your hands will get a little messy here!
  4. Sprinkle finished truffles with a pinch of Himalayan crystal salt and store in an air-tight container in the refrigerator.

    Yum! These look amazing. I can’t wait to try them. Can you clarify the amount of coconut oil? On your post it says 1/42 cup which is confusing to me, unless I am reading it wrong… Thank you!

    Thanks Elaine. You can always pop by when you need a chocolate fix as well :)! That was an error on my part – it should read 1/2 cup. It’s all updated now so thank for catching that!
