I got my first feeling of Fall this weekend after there was a crazy few hour rainfall, followed by a cool but sunny afternoon. I was downtown San Francisco wedding dress shopping with one of my best friends and she looked at me and said “It feels like Fall!” I paused for a moment to take in the crisp air and that after rain smell. I always think the transition from summer to Fall is going to be a tough one until I am reminded of the amazing Fall foods there are! And in my opinion, nothing says Fall quite like a bowl of soup. So here are FLB’s favorite soups. stews and chilis!
Sweet Potato, Green Chile and Curry Soup – packed with so many health benefits and absolutely delicious.
Squash, Chickpea and Kidney Bean Soup – thick, hearty and filled with protein to keep you satisfied.
Vegetable and White Bean Stew – simple and healthy with only 5 ingredients.
Kale and Roasted Vegetable Soup – How can you not love kale and roasted vegetables?
Vegetarian Tortilla Soup – this one takes a bit more TLC but it is so worth it.
Butternut Squash and Corn Soup – When you miss the flavors of summer, this is the perfect dish because the corn brings you right back (but since its frozen you can still eat in season).
Vegetarian Chili – I have tried many different chili recipes and this one is still my staple… and who doesn’t love a meal you can make in the crock pot!
